Here in the Department of Food Process Engineering, we talk a lot about impact; about using our skills to solve real-world problems. It’s a vision we proudly champion, and every so often, a team emerges that embodies this spirit so completely that they become an inspiration to us all.

This month, we are bursting with pride to celebrate Fitroot Ghana, a stellar team comprised of our very own Ruth Owusu, Wisdom Mensah, Samson Iwuozor, and Ruth Akosua Senkerya Owusu. Their remarkable achievement is a powerful testament to what happens when brilliant ideas meet unwavering determination.

From Concept to Revolution

Fitroot Ghana was born from a simple yet powerful mission: to challenge the status quo of Ghana's snack industry. In a market saturated with products high in refined sugar and low in nutritional value, they asked, "Why not better?" Their answer was to revolutionize the snack market by crafting healthy, locally inspired alternatives that are both enjoyable and nourishing.

Leveraging underutilized Ghanaian superfoods like baobab, hibiscus, and tigernuts, the team created a vibrant product line from Baobab-Pineapple Swiris to Hibiscus-Tigernut Cream Pops. Each product is a masterpiece of food science, designed to deliver genuine health benefits without ever sacrificing the flavor that makes a snack a treat.

An Inspiration to the AFPEN Community

By standing up to the inevitable challenges of innovation and making it, Fitroot Ghana has shown the entire AFPEN community that even in a field of numerous discoveries, there is always more to explore and achieve.

They have demonstrated, in the most tangible way, that our academic projects are not just assignments to be graded; they are blueprints for magnificent, real-world enterprises. They have proven that with passion and expertise, we can:

  • Uplift local agriculture by creating value for indigenous crops.
  • Redefine the future of food in Ghana and beyond.

Their success has made the entire Food Process Engineering department proud, and they have brought immense honor to the Association of Food Process Engineers (AFPEN).
