About
Dr. Maame Yaakwaah Adjei is a Senior Lecturer in the Department of Nutrition and Food Science at the University of Ghana and a food scientist specialising in sensory and consumer science, food product development and innovation, dairy science, and food quality and safety. Her research focuses on translating scientific knowledge, consumer insights and technological innovation into food products, processes and solutions that address industry and societal needs.
She leads the University of Ghana Sensory Evaluation Laboratory (UG-SENLAB) and the Dairy Research, Improvement and Innovation Consortium (DRIInC), contributing to multidisciplinary research, research infrastructure development and professional capacity building. Her work spans sensory and consumer research, product and process development, value addition, food quality, commercialization and sustainable food systems. Dr. Adjei actively engages in undergraduate and postgraduate teaching, research supervision, national food standards development, and industry collaboration, with a strong commitment to connecting rigorous food science with practical innovation and impact.
