About
Dr. Joyce Duah is a Lecturer in the Department of Nutrition and Food Science, University of Ghana, with a background in Food Science, laboratory quality management, and food processing. She holds a PhD in Food Science and Technology and an MSc in Food Quality Management from KNUST, and previously served as a Superintendent Laboratory Technologist at the Department.
Her research interests include Food Chemistry, Food Biopolymers, Rheology, Food Product Development, and Food Safety, with a focus on transforming agricultural waste and underutilized resources into functional food ingredients and value-added products. She also contributes to student training and currently coordinates the third-year Food Science Industrial Internship/Placement programme.
