About
Dr. Joycelyn Quansah is a Food Scientist and a Senior Lecturer in the Department of Nutrition and Food Science, University of Ghana. She holds a PhD in Food Science from the University of Georgia, U.S.A. Her research and professional interests span food microbiology and safety, food chemistry, and food toxicology. Her work focuses on detection, characterization, and control of foodborne pathogens, with emphasis on antimicrobial resistance and its implications for food safety, characterization, and functional evaluation of bioactive food components. She is also interested in the evaluation of toxic substances in the food chain and approaches for managing their associated health risks, and strategies for improving the quality, safety, nutritional value, and shelf stability of foods.
Through multidisciplinary research and academic engagements, Dr. Quansah seeks to translate scientific knowledge into practical solutions that contribute to food safety, public health, and sustainable and healthier food systems.
