About
Dr Rose Otema Baah is a Food Scientist and Lecturer with expertise in food chemistry, cereal science, food processing and technology. She holds a PhD and MSc in Food Science from the University of Pretoria, South Africa, and a bachelor’s degree in Nutrition and Food science from the University of Ghana. She has served as a Research Associate with the OR Tambo Africa Research Chairs Initiative and as a Postdoctoral Fellow under the NKABOM Collaborative at the University of Ghana.
Dr Otema Baah’s research focuses on improving the nutritional, functional and technological properties of food materials, with particular interest in indigenous and cereal-based foods and innovative processing technologies, including extrusion and heat-moisture treatment using Infrared and Microwave energy. Her work seeks to contribute to the development of nutritious, functional and sustainable food products.
Her teaching interests include food chemistry, food processing and technology, food analysis, and related areas of food science.
She is a recipient of several prestigious awards, including the Schlumberger Faculty for the Future Fellowship, Margaret McNamara Education Grant, and Global Sorghum Conference Innovation Award.
