About

Dr. Bennett Dzandu holds a PhD in Nutrition and Food Sciences (Food and Bioprocessing Systems) from Louisiana State University, USA. He is a faculty member at the Department of Nutrition and Food Science, University of Ghana, where he contributes to teaching and research in food science, as well as mentoring students. His work focuses on the processing of crops such as cereals, legumes, roots and tubers, and plant products into ingredients with improved functionality and nutritional outcomes. 

His research also covers valorization of food processing by-products and waste into value-added products and food safety (chemical and microbial). He has authored and co-authored publications on composite flours, gluten-free products, and ready-to-eat foods, antimicrobial properties of plant extracts, and probiotic food systems. He has supervised many undergraduate and graduate theses and made presentations at international conferences.
