RESEARCH INTEREST

My research interests focus on processing and preservation technologies that influence functional and structural properties of food. In addition, the total commodity utilization of fruits, vegetables, cereals, tubers as well as cash crops such as cocoa and sugarcane, by developing alternative uses for waste products from processing.
